Trippa alla fiorentina [ Florentine style Tripe]

Ingredients

Trippa alla fiorentina [ Florentine style Tripe] kg 1 boiled tripe, cut into strips
gr 300 tomatoes, peeled and chopped
gr 100 grated Parmesan cheese
extra virgin olive oil
2 stalks celery, finely chopped
2 carrots, finely chopped
1 red onion, finely chopped
salt and pepper

Method

Heat some oil in a pan, add the celery, carrots and onion and fry lightly until they have softened a little. Add the tripe and cook it for a few minutes, then add the tomato, salt to taste, cover the pan and simmer fro 25-30 minutes. Stir in the cheese and serve at once.
