kg 1 boiled tripe, cut into stripsgr 300 tomatoes, peeled and chopped
gr 100 grated Parmesan cheese
extra virgin olive oil
2 stalks celery, finely chopped
2 carrots, finely chopped
1 red onion, finely chopped
